Difference between baking soda and soda
Soda and pure soda are often confused with each other - they are related to each other, both quite inexpensive and proven home remedies, but they differ greatly in their chemistry and application:
Baking soda is also called sodium bicarbonate or sodium hydrogen carbonate, baking soda, baking or baking soda. English expression: baking soda. Soda is also part of baking powder and is mostly used in the kitchen. When it is hot or when it comes into contact with acid or moisture, it forms carbonic acid and begins to bubble - this makes our dough nice and loose.
Pure soda or washing soda, sodium carbonate, on the other hand, is a hazardous substance that can irritate the mucous membranes if you inhale the white powder. It reacts much more violently and alkaline and is mostly used for cleaning.
The basis of baking soda, i.e. sodium hydrogen carbonate, is the mineral Nahcolite. This occurs in natural stocks, including in the US state of Colorado, but in Germany it is largely obtained from table salt by chemically exchanging chlorine for carbonate in the salt.
Baking soda is an incredibly versatile home remedy that you should always have at home. First and foremost, baking soda is a good raising agent and makes the cake nice and fluffy. But it can do a lot more: Soda can be used to make a gentle deodorant, face masks and mild shower gel. Or cleaning agents from all-purpose cleaners to silver baths and shoe deodorants.
With baking soda we can fight bad breath or smells in the refrigerator. But these tricks are special:
Eggs are easier to peel with baking soda in the cooking water.
If you add a teaspoon of baking soda to your egg boiling water, you can peel your breakfast eggs much more easily. The reason for this is that: The baking soda changes the pH value of the water to an alkaline one and this affects the lime shell of the eggs. This makes them easier to peel. This also works with very fresh eggs, which are naturally more difficult to remove from the shell than older ones.
An eye mask with baking soda works quickly and efficiently. Stir half a teaspoon of baking soda into a glass of lukewarm water and let it dissolve well. When it stops bubbling and everything has combined nicely, we soak two cotton pads with it, gently squeeze them out and place them under the eyes. Leave on for ten minutes. Why does that help? Soda has a slightly lightening effect on the skin. The dark skin of the dark circles also looks lighter after use.
Treat musty books with baking soda
If books that we bought at the flea market smell really musty, we can freshen them up with baking soda: We put the book in a bag, add one or two tablespoons of baking soda, close the bag tightly and shake it. We leave the whole thing on the shelf for a few days to a week. Then we open the bag and shake and brush the soda powder out of the book pages.
Clean sneakers with baking soda
We are not allowed to wash some sneakers in the washing machine. Especially with the white midsoles, baking soda works wonders in such cases. Spread a teaspoon of baking soda on a plate, pick it up with a damp sponge and gently rub all light-colored parts of the shoe with it. A disused toothbrush is also useful. If the dirt is very stubborn, we simply let the soda-water mash soak in and, when it is completely dry, rub it off with a sponge cloth and clear water.
This cleaning trick also works very well on the rough leather insoles of some sandals that show black toe prints: Mix a thick paste with baking soda and water, apply it to the sole and allow it to dry completely. Then brush or rub off with a brush or sponge and water.
Peel the carrots with baking soda
Anyone who doesn't feel like peeling their carrots by hand can try the following trick: Pour boiling soda water (1 tablespoon per liter) over the carrots. Drain the carrots and chill them in cold water: the skin of the carrots can now be easily peeled off.
Remove glue residue from labels with baking soda
Annoying glue residues on glasses that we want to continue to use for boiling can be removed in no time with baking soda: Cut a lemon in half, spread a teaspoon of baking soda on the cut surface and rub the lemon over the adhesive residue as a kind of sponge, rinse, finished.
Remove the garlic odor from your hands
If you have to peel a lot of onions and garlic cloves in the kitchen, your hands will usually smell them for a long time. On the other hand, it helps to rub a little baking soda with a few drops of water between your hands, let it work for a moment and wash off. The smells have already disappeared.
Difference between baking powder and baking soda
Even in the refrigerator, a bowl of baking soda catches unpleasant smells. Replace every 3 weeks!
Soda cannot simply be replaced by baking powder or vice versa, because they differ in their composition: Soda is pure sodium hydrogen carbonate, while baking powder, on the other hand, contains soda in many cases, but also an acidifier such as tartaric or citric acid and a separating agent such as Starch made from rice, corn or wheat so that the raising agent does not work too early.
Soda only develops its effect as a leavening agent if the dough also contains sour components such as yoghurt or milk.
We use baking powder in batter. If baking powder and baking soda are specified in a recipe at the same time, a particularly loose dough should be created. As soon as baking powder comes into contact with liquid, it starts its job as a leavening agent. If you leave a batter with baking powder to stand too long, you risk that the baking powder will still fizzle out in the dough key and the cake will be very firm and compact.
